Alexander Bui is a PhD candidate at the Queensland Alliance for Agriculture and Food Innovation (QAAFI). His major research interest involves mechanisms of resistant starch utilisation by the resident gut microbiota using both molecular and bioinformatic approaches.

His PhD thesis title is "Investigating the mechanisms of resistant starch utilisation by gut microbiota using novel high amylose wheat” which aims to better understand and develop healthier wheat-based foods
