Researcher biography

Ali Ali Redha is a PhD student at the QUEX Institute (The University of Queensland and the University of Exeter) under the supervision of Dr Luciana Torquati (UoE), Dr Daniel Cozzolino (UQ), Prof Geoff Nash (UoE), and Prof Mike Gidley (UQ). He is interested in phytochemicals – their green extraction, quantification, stabilisation, bioavailability, and sports-related bioactivity.

His PhD project focuses on improving the bioavailability of health-promoting phytochemicals present in vegetables. It involves developing green analytical techniques for quick determination of bioactive compounds using infrared spectroscopy that could be used in the food industry to monitor and optimise different post-harvest treatments to ensure conserving the highest amount of bioactive compounds. The majority of his PhD project focuses on stabilising bioactive compounds through microencapsulation using macromolecules to improve their stability as food ingredients or supplements with improved bioavailability. The project also involves applying encapsulation methods to protect sensitive bioactive compounds to improve their bioaccessibility and bioavailability.
