Researcher biography

Dr. Peng Wu is currently working as a research officer in the Professor Robert Gilbert's group at Centre for Nutrition and Food Sciences of The University of Queensland (UQ). He obtained his Ph.D degree of Biochemical Engineering from Xiamen University, China. His research interests include:

1. Development of in vitro animal and human gastrointestinal digestive system for food processing and nutritional researches.

2. Starch/glycogen molecular structural characterization using Size-exclusion Chromatography (SEC) and Fluorophore-assisted Carbohydrate Electrophores (FACE).

2. Relations between molecular structure and functional properties.

3. Research and development of functional foods particularly for diabetics.
